A troubling question when you consider that, at certain times, meals in Russia were served "à la française" and in France, "à la russe"! From the Middle Ages to the Age of Enlightenment, the famous French-style service ruled the kingdom's most sumptuous banquets. Imagine an uninterrupted ballet of servants symmetrically arranging a multitude of dishes on the table, reminiscent of the rigor of a French garden. Hors d'oeuvres are followed by roasts, then desserts. Everything is done to enchant the eye. But one is more likely to pick at food than devour it, because time is short - a quarter of an hour per service at most, and only what you have in front of you, since everyone has their own place. A marquis is not entitled to the same delights as a count or a baron! And don't expect to eat hot. After the much lighter, more intimate suppers favored by Louis XV, Russian-style service will soon follow.
