La madeleine

💛 Here is the story of a small cake full of nostalgia: the madeleine. The scene takes place in 1755 in Lorraine, at the castle of Commercy. While Stanislas Leszczyński, king of Poland, has invited some important guests to a banquet, an argument breaks out between the court pastry chef and the head cook. There is no more cake to offer. Luckily, the maid, Madeleine Paulmier, has the idea to hastily prepare a dessert - perhaps moulded in a scallop shell - following a recipe from her grandmother. It is a success! Stanislas gave it his savior's name and revealed the recipe to his daughter Marie, spouse of Louis XV, who made the madeleine known at the Court. It would have remained a simple cake among many others had not one of the greatest French writers, Marcel Proust, immortalized it in 1913 in his work "In Search of Lost Time". It is indeed the taste of a madeleine that evokes to the narrator Marcel the memory of his childhood in Combray. The famous passage made the madeleine enshrined in immortality!
