👑 Do you know the origins of the king's cake ? During the Roman Saturnalia, masters and slaves used to share a bread cake symbolizing the sun. Since the Middle Ages, France has been divided in two. In the south, where people cook with oil, they prefer the "gâteau des rois", a crown-shaped brioche scented with orange blossom and candied fruits. In the north, where people bake with butter, it's the "gorenflot" that prevails, a kind of Alsatian kugelhof. Bakers had then the exclusive right to sell this specialty. Dissatisfied, pastry chefs invented the "Parisienne", a flaky pastry galette filled with frangipane 🥧
